Sturia is the brand of the leading caviar producer in France, with an annual production of 12 tons of different types of caviar. Pioneers in the breeding of sturgeons in France, located very close to Bordeaux, at the mouth of the Garonne River, in an environment of natural pools where the filtered and oxygenated water of the river is mixed with the salt water of the Atlantic Ocean. In these natural pools, the sturgeons have enough space to grow and develop in the best way.

When the female sturgeons are between 10 and 12 years old, it is the optimal time to obtain the best caviar, after ultrasound. Once they have spawned, the grains are selected by size and colour.

Then the caviar grains are placed in 1kg tins with a little salt and are placed in the cold affinage cellar (-2º) to carry out the curing.

Sturgeon species: Gueldenstaedtii.

Curing: 3 months

Tasting notes: Sturia Oscietra caviar is obtained from the exclusive production of Gueldenstaedtii sturgeon concentrated in a sensual caviar, with marine flavours and notes of nuts. Its grains are firm and have a golden tint. On the palate they maintain their firmness, progressively releasing their delicate aroma.
